Description:
This single vineyard Riesling showcases the unique terroir of the Hughes Vineyard, situated less than 1km from Lake Ontario in the Lincoln Lakeshore sub appellation.
Bright aromas of starfruit, Gala apples, white flower, and candied peaches. Light with a mild sweetness and juicy acidity.
Winemaking Notes:
Hand picked and destemmed before being gently pressed. Fermentation was started with non- Saccharomyces species before being inoculated with select Saccharomyces yeast strains. Fermentation was arrested partway through fermentation to preserve a large portion of residual sugar and to lock in aromatic intensity.
