Description:
An exciting balance of sweetness and acidity is the base from with aromas of lime, peach, and white flowers burst in this fun yet powerful Riesling. Chill this wine and enjoy or let it shine paired with salads, Thai, or Indian cuisine or charcuterie and ripe cheese.
Winemaking Notes:
Fruit from select Niagara vineyards was both hand picked and machine harvested before being destemmed and gently pressed. Fermentation was started with non-Saccharomyces species before being inoculated with select Saccharomyces yeast strains. One fermentation was arrested partway through fermentation to preserve a large portion of residual sugar and to lock in aromatic intensity, with the other arrested with a small portion of sugar remaining before both portions were blended together.
