Winemaking Notes:
Fruit from select Niagara vineyards was both hand picked and machine harvested before being destemmed and gently pressed. Fermentation was started with non-Saccharomyces species before being inoculated with select Saccharomyces yeast strains. One fermentation was arrested partway through fermentation to preserve a large portion of residual sugar and to lock in aromatic intensity, with the other arrested with a small portion of sugar remaining before both portions were blended together.

Description:
This single vineyard Riesling showcases the unique terroir of the Hanck Vineyard, nestled in the Niagara Escarpment in the Twenty Mile Bench subappellation.
Dry and mineral driven, this Riesling has notes stonefruit and papaya on the nose and palate backed by mellow acidity and a rich palate.
Winemaking Notes:
Fruit from the Hanck Vineyard was machine harvested destemmed before being gently pressed following a 3-hour cold soak. Fermented cool in stainless steel with select yeast strains. Fermentation was arrested with a small portion of fermentable sugar remaining to enhance palate texture and weight.
